We got this recipe from our wonderful Doula, Elizabeth, who brought us an entire batch of these along with the recipe. I was able to make them with the help of Emily, who sourced the ground Flax and Brewers Yeast and they tasted just like the ones Elizabeth brought over. They're subtly flavored with a very easy bite. They are full of all kinds of perfect ingredients for your new mom.

1/4 cup ground flax

1/2 cup water

6 tbsp melted coconut oil

1/2 cup sugar or coconut sugar

1/4 cup brewers yeast

1 tsp vanilla

1/2 tsp baking soda

2 cups flower or oat flower

1/2 cups rolled oats

1/4 cup dark chocolate chips

Preheat the oven to 350 degrees

Line baking sheet with parchment paper

In a large bowl combine the flax with the water. Mix Well

Add in the coconut oil, sugar, brewers yeast, vanilla, baking soda, stir until combined

Gradually stir in flower until dough is formed

Fold in the oats and the chocolate chips

*These cookies don't rise or melt out, so the shape you make them on the parchment paper is the shape they will be in when they're finished cooking. You can place them pretty close together on the sheet also.*

Drop the dough in 2 tbsp balls, then flatten out with your thumb on the parchment paper

Bake for 10-12 minutes. The bottoms of the cookies will begin to turn golden

*These cookies will soften at room temperature or can be refrigerated if you'd like.
